From the Test Kitchen: Buffalo Mini Pizzas

27 June: Buffalo Mini Pizzas

United Tribes Technical College, “Cooking with Buffalo”

Many 1994 Land-grant Tribal Colleges and Universities are leading the wellness movement by enhancing contemporary and traditional initiatives to cultivate tribal food sovereignty—the right of people to shape and control their own food systems. Substituting buffalo, a traditional and healthy ingredient, for beef in this otherwise familiar recipe demonstrates one way to get involved with the growing food sovereignty movement.

Ingredients

1 package English muffins

1 lb ground buffalo

1 jar pizza or spaghetti sauce

8 oz. package mozzarella cheese

Various toppings such as black olives, green peppers, mushrooms, onions, etc.

Method

Brown and drain the ground buffalo meat. Put it aside in a bowl.

Place your desired amount of sauce on each of the English muffins.

Top with cooked buffalo, mozzarella cheese, and additional toppings if desired.

Bake at 400º F for 8 to 10 minutes.

    I did the math! Using whole wheat English muffins, 96% fat free ground buffalo meat, one container of Trader Joe’s pizza sauce, and part-skim mozzarella, a single serving of this treat (without the toppings) yields:
    353 calories
    32.6 g protein
    11.0 g fat, of which
    4.7 g are saturated fats & 2.7 are monounsaturated
    33.9 g carbohydrates, of which
    5.9 g are fiber and
    8.8 g are sugar
    PLUS
    11.2% daily requirement of Vitamin A
    5% daily requirement of Vitamin C
    48.7% daily requirement of Calcium
    22.4% daily requirement of Iron
    430.3 mg of Potassium
    810.7 mg of Sodium

    A pretty good scorecard for a nicely balanced meal.

    Sorry, forgot to say, this assumes there are 6 burgers per recipe.

    Do you Smithy folks plan to put where on a Map you can find the Justin Marshall Performance Art Center – or did O’bama classify this?

      @michael The different performance tents are marked on the map, I think you might be thinking of the Justin S. Morrill Performing Arts Center, located in Campus and Community and marked on the map as well. Hope this answers your question.
