South American Food

1. Rotisserie Chicken (Pollo a la Brasa)

Pollo a la Brasa (rotisserie chicken with Peruvian spices served with french fries) is a traditional and very popular dish throughout Latin America and the Caribbean. Each region has its own variation, with Peru's being one of the best known.

2. Latin Beef Kabob

Latin Beef Kabob (marinated steak on a stick with Peruvian spices served with rice and beans) is a traditional entrée throughout Latin America, especially in South America where there are large ranching communities. The cooking process is done communally or in the home, and always served with rice and beans as a side dish. The marinade used here is traditional to Peru.

3. Peruvian Style Salad

Peruvian Style Salad (served with tomato, potatoes, corn, and carrots) is typical of Latin America where salads are usually simple and made with ingredients native to the region. Throughout the Caribbean and South America, boiled potatoes are a traditional addition. The variety of corn used here is grown in the northern region of South America and has large, light-colored kernels.

4. Rice and beans

Rice and beans are the staples of most Latin American and Caribbean homes. The pinto bean in this dish is particularly popular in Mexico, Central America, and Peru, where cooking the rice and beans together is known as casamiento or marriage.

5. French fries

Latin Americans make use of a variety of root vegetables; the potato, a native root of the Andes, is the most common. French fries are traditionally cut thick, and eaten with creamy and spicy dips.
